The Ultimate Whole Wheat Blueberry Muffins
- 1 1/2 cups Whole Wheat Flour
- 1 tbsp Flax Seed
- 3 tbsp water
- 2 tsp Baking Powder
- ¼ tsp baking soda
- 1 tsp cinnamon ground
- ½ tsp kosher salt
- ½ cup no added sugar applesauce
- ¼ cup oil like canola or light olive oil
- ⅓ cup honey
- 1 ½ cups fresh or frozen blueberries
Preheat oven to 350 degrees.
Grind flax seed (or use flax meal) and combine with water. Allow it to sit for 5 minutes while preparing and measuring the other ingredients.
Combine dry ingredients in a medium bowl- flour, baking soda, salt, baking powder, and cinnamon.
In a medium bowl, stir together wet ingredients: applesauce, honey, canola oil and flax seed mixture.
Slowly incorporate dry ingredients into wet. Then carefully stir in the blueberries. Line muffin tin with papers and spray with oil spray (I use a Misto). Fill muffin tin and bake for about 18-20 minutes or until toothpick comes out clean. Cool and enjoy!
Don't have any blueberries? No problem! Try this recipe with 1 1/2 cups of diced apple!
