The Ultimate Whole Wheat Blueberry Muffins

Ingredients

  • 1 1/2 cups Whole Wheat Flour
  • 1 tbsp Flax Seed
  • 3 tbsp water
  • 2 tsp Baking Powder
  • ¼ tsp baking soda
  • 1 tsp cinnamon ground
  • ½ tsp kosher salt
  • ½ cup no added sugar applesauce
  • ¼ cup oil like canola or light olive oil
  • cup honey
  • 1 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat oven to 350 degrees.

  2. Grind flax seed (or use flax meal) and combine with water. Allow it to sit for 5 minutes while preparing and measuring the other ingredients.

  3. Combine dry ingredients in a medium bowl- flour, baking soda, salt, baking powder, and cinnamon.

  4. In a medium bowl, stir together wet ingredients: applesauce, honey, canola oil and flax seed mixture.

  5. Slowly incorporate dry ingredients into wet. Then carefully stir in the blueberries. Line muffin tin with papers and spray with oil spray (I use a Misto). Fill muffin tin and bake for about 20-25 minutes or until toothpick comes out clean. Cool and enjoy!

Recipe Notes

Don't have any blueberries?  No problem!  Try this recipe with 1 1/2 cups of diced apple!
