Broccoli Hummus Snack Bites

Healthy is not a size…it’s a lifestyle.
How often do you choose a veggie at snack time? Vegetables may not be the first thing we think to grab at 4pm, but these savory broccoli hummus snack bites might just change your mind!  We are encouraged to consume a minimum of 5 servings of colorful vegetables per day, but we should not limit them to only dinner and lunch! Slightly crunchy on the outside and reminiscent of creamy hummus on the inside, these broccoli bites are much more exciting than the traditional veggies and hummus snack. And, they are super simple to make!

Honey Parmesan Roasted Acorn Squash

Acorn squash is one of more than a dozen winter squash varieties and like the name indicates, it is a large replica of those oak tree acorns that pepper the ground during the fall and winter. Quite possibly you have passed by these cute green and orange gourds a time or two at your grocery store or farmer’s market.  It has a delicate squash flavor with slightly sweet attributes and boasts a whopping 9 grams of fiber per 1 cup serving.

Hearty Beef and Bean Pumpkin Chili

“It’s the most wonderful time of the year!”  After busy days of shopping, preparing, partying and merriment, there are those nights when you just want to get cozy on the couch, stare into a blazing fire and enjoy a steaming hot bowl of comfort food.  Call me a crazy romantic, but this is what I dream of! After our busy weekend hunting for our voluptuous Fraser Fir Christmas tree, (we call her “Daphne”) and then decorating her until she glowed and sparkled, along with volunteering, housework, grocery shopping and food prep, I was ready for a relaxed evening with a few of my favorite things like yoga pants, snuggling, a warm fire, chili and a favorite Christmas movie (mine is White Christmas with Bing Crosby…absolutely love!!).
